I have one of those regular Plastimo mixer taps with a built in shower head. It would be very convenient for showering, except that as my Par-Max water pressure pump cuts in and out, the water temperature alternates from icy cold to raging hot.

What can I do about this?

One thing I've thought of is to replace the tap with one containing a thermostatic mixer unit. Would this work? Even if it does, the only ones I've seen are clunky great units for the flashier type of home bath, featuring separate tap and shower outlets. Is there anything equivalent for a small yacht?

[Later edit: In reply to Aardee and PeterBoater below, an accumulator is fitted next to the pump, and its pressure is regularly checked.]

Does your boat have an accumulator tank, if so does it still pressurise? - That should smooth out the water flow and allow for a more constant temperature. I recently added one to our boat and it's transformed it.

A standard domestic shower valve will work fine

I'm not sure that a domestic thermostatic mixer on its own will react quickly enough for this problem. It definitely shouldn't be happening, so a functioning accumulator tank seems to be required, possibly with a thermostatic mixer fitted as well. Is the pump pressure switch working correctly?
