Can anybody point me in the direction of some simple plans for a self-build servo-pendulum steering gear suitable for a 27 ft, 5 ton, tiller steered sloop? Ta.

Theory, principles and practice of self-steering for all types of wind vanes. Includes diagrams and dimensioned plans for several different vanes.

It's published in New Zealand and is available in most nautical bookshops.
 
Try Fay Marine. (can't remember the web address-sorry) The have plans for a home-knitted windvane.

Have a look at Peter Forthman's book - Adlard Coles I think - on just about all self sterring systems - also at www.eindpilot.de - for excellent reference material.
