Seaward describe fuel economy on a Seaward 25 with twin 110 hp 4JH4 Yanmars as, "Fuel consumption at 15 knots is approximately 2.0 gallons per hour per engine."

Do you think this is a practical and realistic figure, or is the word "approximately" the key phrase?

I think that you have sussed it. You may get worse or better depending on the sea state. This assmes that Seaward have used an average sea state what ever that is ....

Look at those advertised consumption figures like a sailor looks at his/her performance handicap number for racing...

Assume accuracy if your power boat has a clean smooth bottom, minimal added displacement due to carrying too much stuff inside or having the hull absorb too much osmosis water weight.
Motor(s) running at factory-tuned specs, burning clean fuel.
Operator managing the trim and throttles for best efficiency....
and well, you get my drift...

In this litigious day and age, I would guess that, on a good day, the vendor's specs can indeed be replicated.

I used to own a Channel Islands 22 with a single Mermaid 140, carried lots of heavy diving gear and used to average just over 4mpg with a top speed of 17kts, cruising at 12-14kts, so I'd say those figures are achievable on a good day but I'd be expecting nearer 2.5 gals per engine. Great boat, would love to own one.
