sail simulator programmes - any tips?

I have Virtual Skipper 2 ... more of a racing game than simulator ... I believe they are up to VS 5 now ...

There is a demo - you only get a few minutes though.

You can load 100's of boats and ships.

Best thing is the wave dynamics - I think it is the most realistic in terms of physics.

Its a bit free form though but you can set up almost any scenario you like with different boats, weather etc
 
VSK5 - "32nd America's Cup" is entertaining. Excellent graphics, sail plan options, multi views inc cockpit, tides, gusts, wind shadow etc. Can use manual sail trim option but main and headsail all come off one control so most people don't bother.

It's primarily based around racing though so not really a suitable cruising trainer (good for racing col regs though) and you don't have the option to act as a trimmer, crew or other position.

You can download or build your own boat but it's pretty complex!

Good online game-play, with stout competition mainly against French, Italians and people further afield.
