I have replaced my fuel lines. I'll need to bleed the system as much as possible with the manual pump, but before going back in the water I want to ensure the engines are running, by starting them for a few seconds on the hard.

The impellers have been removed for the winter anyway. I'm guessing there's no problem starting the engines for a few seconds with impellers removed - there is nothing else that will wear out?

I would imagine its a problem to have no water going through the exhausts and cooling them. Why not put the impellers back and start them up with a hose supplying the cooling water. I do this each end of season to clear out the salt water

Did that with our engine when out of the water. It was fine. Just make sure the hull can't move off its chocks/cradle!

To add to above, seeing the impellers are out a squirt of diluted washup liquid on the impeller shaft seal, for a bit of lubrication.

dont be suprised to see exhaust smoke come out of the pump, may be with some water, if not fully drained

Seconds of running won't harm anything. Won't get anywhere near a temp where exhaust or anything else gets hot.

But:
You obviously must fit the impellers before launch anyway. By fitting them now you'll get a true live test of the cooling circuit.
Time (seconds..!) might need extension while you await stable idling, check tightness, seals etc. and proper water supply will allow you to run as long as you like.
