Replacing pipe

I'm replacing the pipe from the heads pump out. In theory turning off the sea cock should secure the boat before removed the existing pipe but... Or should I dry out against the quay first?

If you are sure the seacock is functioning and it's not just the handle turning then there is no reason to dry out.

What about undoing the other end of the pipe first (assuming it's above sea level)?

You could then close the seacock and gingerly lower the pipe to below sea level - any leakage you just raise it back up and think again.
