Recovering Wheel - which stick type?

I've bought a set of leather to recover my wheel and it comes with instructions for the stitching. However I've seen a lot of different methods so I presume one is probably better. Has anyone tried different types and knows the merits?

I saw this on a friends boat recently. Seems like it was double stitched perhaps and looks really solid.
