If you were considering a July trip from southern Cornwall to West Coast of Scotland, s/h delivery for a summer family holiday once there, 32 ft sailing yacht….

…how would you break up the passages?

I wouldn’t. Get the weather and go for it. We did Falmouth to Troon non-stop, departed Monday evening, arrived Thursday morning. It was a delivery passage, it gets it over with.

Have done it in both directions a few of times singlehanded. Basically, stops were dictated by strong head winds, fuel, and the need for a long (12 hour+) sleep. Usually used a combination of St Ives Bay, Milford Haven, Hollyhead, Isle of Man, Bangor, Port Ellen, then west of Mull and Skye, Stornoway, Stromness or Scalloway (were home ports) but have stopped at one or two other places as needs must.
With a crew stops were kept to a minimum and only as dictated by need for fuel or strong head winds. As @Robih said, treat it as a delivery trip and keep going.
