I am trying to replace two A9 chart plotters with Axium+ 9 RV units. Cabling issues.

Replacing the power cable no problem.

Both the A9s had two network cables attached, only one plug on each Axium. What do I do with the extra plugs?

Each A9 had one Seatalk NG cable plugged in (white/black). Using the adapter cable supplied with the Axium (only 6" long) it will accept a Seatalk NG cable. The problem is they are both female.

Boat has Raymarine and Garmin devices with Seatalk and NEMA2000 backbones. See attached schematic.

Sounds like you need a network switch. I had to do that when I wanted to connect an external keypad, a camera, a radar & 2 Axiom MFD's together all on Raynet. You can pay silly money for a Raymarine one or else get a generic 12 volt one like this...

The Raymarine devices have Raynet connectors on but Raymarine do Raynet to RJ45 cables...

For your last problem is this what you need?

Raymarine SeaTalk ng Male to Devicenet Female Adapter - A06082

If not then there are longer versions of the SeatalkNG/DeviceNet cable that came with the Axiom at usual Raymarine prices. Use this longer cable instead of your existing black/white spur cable to plug into your backbone connector.

If that's still not long enough you can extend you DeviceNet cable...
