I am in the process of fitting a Webasto ThermoTop C 5kW water based heating system in my boat, with a standard radiator in the forward cabin and a fan matrix blower in the saloon. The fan matrix unit is a Kalori Silencio 2, which has two * two-speed fans, see here .
Can you recommend a 12V thermostat that I can use to switch the fans low/high to control the temperature in the saloon? A standard room thermostat could be used to switch both fans from low to high at the same time. In a boat would there be any benefit in a more complicated switching arrangement (i.e 1 fan low, 2 fans low, 1 low/1 high, 2 fans high)?
 
Not exactly answering your question but here's what I did in the same situation, using Horstman DRT1 battery operated digital thermostats, which cost about £15 each and are nornally used for domestic central heating.

I rigged mine to allow that stats (one in each room) to turn on the heater (if not already on) and then to swtich on the matrix fan. The matrix fan is delayed to allow a little time for the water in the matrix to get warm. I decided against controlling the fan speed from the matrix and just mounted one little I/II rocker switch on the Silencio 2, so the speed is selected manually. Both fans are controlled from the same rocker switch. BTW, the Silencio 2 is quite noisy on top speed.
