How does the Par water pump know when to switch off after replacing the water taken from the tap?
Is there a separate pressure switch in the system or is it part of the Par pump?
My pump has stopped switching off. My system has an accumulator, I've checked it's pressure and topped it up to 2 bars.
With the pump turned on, it delivers pressured water to the tap. Turn the pump off and the water will flow until the residual pressure drops.

Find your pump on this page https://jabscoshop.com/marine/pumps/pressurised-fresh-water-pumps/

Click on "details" and you will see all the facts and figures including the pressures at which the pressure switch cuts in and out,

Scroll down an you will see the exploded parts diagram on which you will be able to identify the pressure switch ( click on the diagram to zoom in)

The pressure switch may not be faulty. The pump may not be reaching the cut off pressure if the valves etc require cleaning or replacing.
