pressure cooker recipes

My favourite is "road-kill" rabbit stew! But I guess that's not really helpful on a boat, unless you hit it on the way to the mooring!
All stews are great, and left overs can be curried for tomorrow. Another favourite is to buy a cooked chicken, have it as a roast, then sandwiches or with rice and finally put the carcase in a pressure cooker for 10 mins, take it out and strip off ALL the meat & cook veg, (spuds, carrots, celery etc) finally add peas, meat and sweetcorn & leeks and some cornflower thickening (a dash of Lea & Perrins is anothe rnice touch). The resultant chicken broth is superb and an excellent cold cure.
 
How about a nice bit of ham/bacon/gammon? Cover unsmoked bacon or gammon joint in cold water & bring to boil. Discard water & add around 1 pint cold water per 20-30 mins cooking time plus bayleaf or two, onion(s) and carrots. Cook at high pressure for 15min per lb then leave to cool in the juice.

Carve for sandwiches or salads and use the stock and veg for soup

If you prefer to cook your own chicken, you can precook a whole chicken in the pressure cooker for 10-15 mins and then give it 20-30mins in the oven to brown - an excellent way to save gas.

Anything cooked in a pressure cooker & left sealed should be Ok without refrigeration for at least 24 hours. I normally make a casserole (known to my family as "crossing stew") before a long passage & serve it whenever we feel like eating.

It's the most valuable utensil in the galley in my opinion, partly because it's a big deep pan which is valuable for non-pressure cooking too.
