Pockets in the cockpit sides

I'd be very wary of cutting holes in the cockpit sides that will then be sealed with old food containers or anything not designed to withstand UV exposure. Even the Sheraton vac-formed ABS product makes me a bit nervous. On my boat (Anderson 22) the resulting hole if it failed would allow water into the not-particularly-watertight lockers, and then into the bilge. I am contemplating taking a plug from the one existing moulding and making another for the other side.

Instead of a rigid plastic/GRP box I've used a fabric pocket, made from an old sail. A kind of 'window frame' around the cut-out in the cockpit side holds it in place. Also made a cockpit tidy bag like the one suggested by Impaler from the same sail - one of the most useful additions I've made to my boat. (Perhaps that's a new thread - 1001 Uses of an Old Sail???)

I know Rum Run has an inboard, but aren't the cockpit lockers sealed individually with sides and bulkheads then ?
 
Err, well they were once! The control cables and exhaust piping go through breeches in the locker / bilge divide. Black mark for the original installers. Rectifying this is on the list for the spring. Even if there were no pathway into the bilges I'd not fancy the lockers filling up, which presumably would not take long through 9" x 5" ish holes in the wrong conditions. Especially since one has the starter battery in it, and hopefully, soon, an Eberspacher stuffed into the top corner.
The pocket that is missing currently has the throttle/gear lever over the hole on a blanking plate but it is just too far from the tiller to be able to reach without stretching. I need to find out if the Bowden cables can be shortened without special tools.
