Heading up the west coast, is Padstow an easy enough stop from Penzance en-route to Milford Haven ?. Never been that way, any thoughts / advice appreciated …..

We stopped off at Padstow on our way to Milford Haven last year, and it was great.
We didn't go from Penzance, but from the Scillies. Depending on your boat size and speed, it should be possible to work the tides such that leaving from Penzance results in arriving at Padstow with enough water. Others here have better experience on that, and will probably respond!
Obviously weather dependent - despite the Doom Bar being named not from doom-ridden predictions, it's still only navigable in the right conditions.
Once there, we found the harbour and harbourmaster very welcoming. They have fender boards to borrow if alongside the quayside (which if you're deep, you will be).

IIRCt 5kts, and passing the Runnel Stone at LW minus 2, you should get to Padstow at about HW.
But as I have a bad memory you should check in Reeds or equivalent
Padstow easy except in high winds from north but check the buoyage carefully.

I love Padstow but after 3 days of being the goldfish in the bowl, it's time to move on

One of our outstanding memories is entering Padstow on a Sunday evening with the silver band playing on the quayside. We have sailed all over Europe but Padstow remains near the top of our favourites list

Just remember that you need high tide to get up the camel to padstow harbour lock, and low tide at camel mouth to cross to milford.
We went rose with the tide from the "Land" and faffed aroud a bit until we could get into the harbour - route well buoyed - start on port hand side and follow the buoys etc. You can anchor in the pool, or even not proceed past the doom bar, but padstows pasties are worth a step ashore
Then we came out on falling tide and anchored under stepper point when wind southerly or last year, pentire point as wind the other way round, then went up with the tide to Lundy then Skomer
