Origo 3000 gimbals

I'm installing an Origo 3000 spirit stove in my boat. Attaching the plates for the gimbals to the stove, and the "gimbal arms" to them, are a piece of cake. However, there is insufficient height available to mount the "gimbal arms" vertically as shown from 0:15 in Dylan's video of his Origo 1500 here:
I have a fold down worktop, with an aluminium heatshield on it, which covers the stove when not in use. I am keen to keep it. Also, the sides of the mounting position taper inward very slightly towards the bottom, such that the gimbal arms would rub against the plates, stopping the stove from swinging. Here is a picture of the mounting position, on another Sadler 25:

I will soon bite the bullet and drill some holes to mount the "arms" at an angle, possibly even horizontally, although this would place quite a strain on the GRP and the extendable arms themselves. If anyone has mounted an Origo 3000 in gimbals and can advise, I'd welcome their comments. What did you do? Did it work?
I only want to drill holes once - in the correct position...
 
My other option, having thought about it, is to get the hacksaw out and only use the "top half" of the gimble arms. I'd then drill some holes in them, and mount vertically.
I'm just reluctant to start drilling holes in the boat without some thought...
