oak and salt water

I am making up backing plates for e.g. wiches, cleats, etc., from bits of kiln dried oak I have lying around.

What is the best way to treat it so it doesn't go black in 20 years time ? Varnish, epoxy, or leave it ?

I'd leave it bare as any coating would get knocked about. English oak is pretty good ..... not sure about other varieties though.

Tung oil is good with oak, or paint them.
