Non Breathable Waterproof Trousers

Yes, I bought some Helly Hensen breathable bottoms for light summer use and they were hopeless. I have no experience of the top end gear because of 1) silly prices and 2) general bulk and weight 3) tales of reproofing and replacement 4) It not really suiting (sic) what I do. It must be good, people seem quite keen on it. I guess I have come to the same conclusions as you however, heavy offshore gear is not ideal in an open boat, perhaps that is why fishermen stick to the traditional? When I see students striding along to the sailing school in their brand new Southern Ocean, Polar Icecap.,Force 11 Stormcheaters I always feel a bit sorry for the poor devils.

I also need to be able to pee without taking my jacket and life jacket off - hence the double end zip requirement. I can see no information about the nature of zips on any of the Guy Cotton seller's web sites.

The standard Guy Cotten bib and brace trousers have a perfectly good multi-layered velcro fly.

Guy Cotten stuff is by no means the only brand (try Elka Rainwear or Grundens among others) but it is sensible, well-made and effective and usually available from actual chandleries or fisherfolk supply places. It's not so easy to find the full range of their products or to find out about it on the web.

If you do go for Guy Cotten, I'd get their commercial 'Nylpeche' fabric rather than the older, lighter 'Cap Coz' version (although that's pretty tough too). Or at least I'd not end up, as I have, with Nylpeche bibs, Cap Coz jacket and Grundens Souwester because while I'm dry, comfortable and warm, I'm also three shades of yellow... which seems to bother some people.
