Spain is in the EU, so providing you're exporting a boat there from another EU country, there are no duties or taxes to pay assuming that the boat is already VAT paid
However, there is something called matriculation tax which is an additional (12%?) tax levied on Spanish registered boats and boats used by Spanish residents in Spain but since I guess you are a British resident and have a British registered boat, this won't apply although you will be liable if your boat is offered for charter and is longer than 15m

Canary Islands are in fact not part of the EU. They are a Spanish Dependant Territory and as such raise tax in a different way, hence the cheap prices for alchohol, tobacco and fuel. You will fill in a normal mooring agreement at the marina of your choice....book well in advance...and this paperwork is available for customs, etc.
Everything else depends whether you become a resident or not. Generally however, if you pays yer money, dont ask questions, the matter rests there. An occasional trip to Morocco to get passport stamped and retention of boarding card stubs from flights to destinations outside the Canaries also helps. It can vary too from Island to Island as to how vigorous rules are enforced.
Dont be put off, Its a great place to keep a boat and low costa living!! Hope this helps.
