Our practice is to use 316 stainless on all external fittings on the boat but use (as advised on this forum) galvanised mild steel for mooring chains and shackles.

Is there a contradiction here?

Nope
BUT please look at the safe working load of the galvanised shackles you use.
Stainless chain is also ok - but only if you have a BIG disposable bank balance
