A little worryingly this morning, on starting the engine, I get the usual single beep and then two beeps... reset the throttle a few times and now all ok: These are the possible reasons for the double beep alarm:

1.) Faulty cam,
2.) IAC,
3.) MAP,
4.) MAT,
5.) knock sensors.
6.) open/short in the engine cooling temp circuit
7.) open/short in fuel injector wiring circuit,
8.) open/short in oil PSI circuit,
9.) open/short in exhaust manifold cooling temp circuit,
10.) open/short in sea pump circuit,
11.) open/short in throttle position circuit

do you think it's ok to continue to use the boat in the meantime or best get the codes read to ascertain the cause?

many thanks Gary

p.s. it's a 5.0l MPI

In theory, if you're not getting the beeps anymore, also the error is not there anymore (though it should be stored, hence readable for peace of mind).
But for the future, I'd strongly recommend fitting a Smartcraft display.
The simpler one, which is more than enough, costs less than 200$ IIRC, and it's extremely easy to fit.
The best accessory you can buy for any Merc MPI engine, imho.
Aside from showing the error messages, you get instantaneous consumption, residual range, and much more.
