Hello

I need to cut our aft cabin double mattresses in half, in order to fit leecloths and create 2x seaberths in each cabin.

Then recut the covers accordingly.

Any tips on folks to do the latter piece of work? Solent area is fine, but Surrey/Sussex/Hampshire all workable. I have an inkling that a caravan place might be cheaper than a boat place...

You will need extra material to cover the sides. It might be a problem if you want a match.
How are you going to cut the foam?
Agreed. But an offcut will do if we can find an acceptable colour. Doesn't need to be a match.

Cutting the foam - I don't know. DIY if anyone can suggest how to do it neatly.

Cutting foam -

1) mark the cutting line with a felt tip pen
2) wait until the wife is out
3) take your electric carving knife out of the kitchen hold att 90deg to surface and cut slowly and steady.
4) clean up knife and replace in kitchen

Good luck

Paul Rainbow on the PBO forum wrote an excellent piece on making a standard mattress fit his rounded berth a year or so ago. Perhaps do a search on threads he has started.
