does anyone know how to use the self baling controls in the maccy 26, there is a small rubber compression type bung on the port side and a threaded bolt type thing on the starboard side under the companionway steps.

I assume that you are talking about the water ballast. My 26X has a bung under the berths at the bow and a sliding seal on the transom. The way it works is that you open the seal to allow water into the ballast (it will not enter until you remove the bung to allow the air to displace) about 4 to 5 minutes later you will have a full ballst tank and you then replace the bung and shut the seal.
To self drain the ballast you need to remove the bung, open the seal and using the engine travel at about 5 knots for a few minutes, this will have the same effect as self bailing a rib the water will discharge through the seal. Replace the bung and shut the seal. Ballast empty.

I own a Macgregor 26C (the sailing version). As far as I'm aware the only way to remove the ballast is when you take her out of the water - put her on the trailer, take out rubber stopper and undo the threaded bolt - the ballast will pour out. When you launch her allow the tank to fill and then tighten up the threaded bolt and put in the rubber stopper. I don't think there is any way of removing the ballast when in the water (unlike the 26X) - besides, I can't imagine why you would want to as you would loose all stability if the ballast were removed (she would essentially become a large dingy).

I am currently selling my 26C following the purchase of a larger yacht - we have had 9 years of great sailing and fun with her.

Yes, the table is formed from one of the (4) boards under the aft berth. You will find that one board has a fitting attached to it to take the upright tube (table leg). The other end bolts onto the worksurface by the sink. The only down side is that you can't go to bed when the table is up! Although I guess it would be very easy to make another board from marine ply.

no, you will probably find it floating around a locker somewhere - it's simply 18 inches of metal tube - nothing fancy.
