am replacing my gas piping which has 5/16 spigot at the end. I have some 8mm olives. Can I use 8mm olives on 5/16 pipe - the difference being 0.003 inch or 0.06mm

Have you tried the 8mm olive on the pipe?
IIRC metric pipe is measured as the OD and imperial pipe is measured as the ID, which is why 15mm is the metric equivalent of 1/2"
The difference may be a lot more that you expect.

yes - the pipe is 5/16 od and sold as such. the olive is a loose sliding fit.

You can use the 8 mm olive on the 5/16" pipe. The difference is only .06 mm which will be absorbed by the compression of the olive when the nut is tightened.

they are soft copper but olive shaped.

All the ones I've seen for LPG have been parallel (looking like they are short lengths of cut off pipe), as against the olive shape for water pipes.
