keel and hog

Has anyone replaced the keel and hog on their boat? My Tideway has a half inch vertical deflection fore and aft from the keel to the stem and sterm post, created during building by two half inch wedges placed under the keel (stem and stern ends).
My questions are :
1 how do you recreate this deflection when replacing with new wood?
2 Is this deflection likely to be in the hog as well?

The deflection will most definitely be in the hog, but as you have a completed hull to fit it to, you will find that as you put it in, that the hog will deflect that small amount when you clamp it in place. I'm not intimately familiar with the Tideway keel, and whether it is sawn to shape or just bent in. If it is the latter, the you could just bend it into place and secure it to the hog. Half inch over 12 ft is not a severe bend at all.
