There was a novel called (I think) 'Ninety Two in the Shade' by Tom McGuane based round some people in Florida who took clients trophy fishing on these skiffs.

You asked for it, the definitive answer....

There are what they use for fishing the flats in the Florida Keys and elsewhere. Shaped like a flat dory with a whopping great outboard on the back they are capable of about 60 knots, draw about 6 inches and go like whatsit off a doodah. They usually come with a platform that sits over the outboard that the guide stands on whilst pushing the craft quietly through the water in pursuit of bonefish, tarpon and permit. The fisherman stands on the front watching out for the fish. Iconically, the fisherman uses a flyrod with small shrimp imitating fly for the bonefish or a large fish imitating fly for the tarpon, although others use bait. In Texas and Carolina they also use them for fishing for redfish.

I've spent many a happy hour being poled around the flats with even the odd fish to show for it.
 
Well worth a pop, the fishing is bloody hard work but worth for the experience alone. Bonefish coming towards you across a flat, casting to drop a fly in front on it, a strip to hook it followed by a 100 yard run. Ah..... it's as much fun as it sounds.

I'll be in Key West in April/May for a week long top up....
