I am thinking of using one of those rechargable jump starters for powering the VHF/Echo sounder on my Corribee. Does anyone use such an arrangement? and what is the best way of connecting it to the boats 12v system?

I'm not sure about this. If you already have a battery with your 12 v. system then why not use that for these low demand items? A jump start battery will be biassed towards high output current for a short period rather than high amp. hour capacity for small currents.

There is no working battery at the moment, so the Jumpstart would be a replacement for a standard 12v battery. I note your point about high output vs high Ah.

Not so .... A Jumpstart pack is a SLA battery and doesn't care ... in fact too high an output and its not happy !!

I have a Powerpack from halfords ... 17AHr .... with torch and meter fitted in front panel ... charges from car or mains. It also has a 12v ciggy socket in side to power all sorts ...

I use mine in the dinghy / on my small weekender boat for GPS surveying of river ... echo-sounder etc. I get a good days use out of it .. with charge to spare.

To the original poster - they are an excellent portable source.

As to how to connect ? Get yourself a multiple cigarette style socket with plug on end to plug into the pack. The type of items you are talking about will not overload this. No need for anything fancy .... I even run a car radio etc. at times from it ...
