One of those 'should I fix it if it ain't broke' kind of questions........

Bought an 18 year-old boat a year ago with a Volvo 2001 engine. Runs reasonably well, starts ok etc although the pick-up of revs is quite slow when the throttle is opened. Being the type to 'service before' rather than 'fix after' I am debating whether I should take the injector out for cleaning/servicing etc.

Is it best left undisturbed or will I gain some benefit or is it a case of best left alone?

Should be a regular remove, clean, test and service if necessary job on any diesel engine. If you don't know how remove and take to a specialist. Not expensive and good investment.

2001 is the 9 hp engine isn't it? I wouldn't expect fiery acceleration with a 26' boat.

But as Boatmike says a good clean wouldn't do any harm but make sure things are spotlessly clean all around before you start. A little speck of dirt in the wrong place can cause a lot of problems.

Be a bit careful about taking the injector out. I have a 2003 and have been told by my tame diesel fitter that they are fitted into a copper sleeve, and if this gets damaged, it's a head off job and lots of special tools to remove the old sleeve and put a new one in.

A single cylinder diesel needs a heavy flywheel to keep it running, so I wouldn't be surprised if it were a bit slow to pick up. Like Sybarite I wouldn't expect sparkling performance from that engine in a 26 footer.

IMHO, if it starts OK, doesn't smoke significatly once it's warmed up and gets up near peak revs in gear, there's not a lot wrong with it.
