My partners are both keen on upgrading the engine hatch sound proofing. I can certainly see their point as the boat is pretty load at anything approaching full throttle. In addition, I think that a proper seal would further improve things.

I'm sure that sound proofing material has advanced in the 15 years since the boat was built. So what's considered to be the best sound proofing material these days and how likely is the old stuff to come off easily (not that I'll be doing it)?

Try https://www.asap-supplies.com/soundproofing.
When it comes to sound transmission through a panel the greater the density of the soundproofing layer the better unfortunately. The engine room is a reverberant environment so generally lining it with sound absorbing material will reduce sound levels. If you have a panel somewhere that is resonating, you can feel it with your fingertips, then it would benefit from a layer of damping material such as barrier mat.
Close up any obvious gaps of course.

Talk to the guys at 'Classic acoustics' in Telford.(01952 587360)...they can advise as to the best solution and provide tailored pieces, without marine pricing.

Thanks, it appears that they make their own soundproofing and list 'Marine' as one of their specialities. Having it professionally cut would be good. I wonder how this would compare to a larger brand, Halyard have been recommended and I see PYB recommends 3M above. Anyhow, I'll take photos and measurements this weekend and see what they advise.

Can anyone recall any review / independent tests? Obviously it's only worth the effort if we can get a considerably better result than we have at present (which is 15 years old).

As a comparison, i have 2 layers of loaded foam with a polymer lead interlining. The sheet is faced with alu foil so its easy to keep clean and helps with maintenance by reflecting light into the engine bay. I'd recommend sealing the edges with alu tape to keep it neat.
has reduced the noise level substantially (Qualitatively) and is worlds better that the OE eggbox foam.
They can make it with self adhesive backing for easy application, but its worth also fixing with screws and big washers.
