hydrovane wind self steering

Has anyone any experience of fitting a hydrovane, or indeed any other wind self steering to Prout 37 Cats?

I think you should redirect your question to themultihull.com
As a rough guide since Prouts are not known known for rapid acceleration
there's no reason why a Hydrovane shouldn't work.
I know the designer likes a good distance 'tween the boats rudder and
the vanes rudder which could be awkward if mounted
on one of the Prout hulls, but maybe you could mount it
on the aft beam.
I have considered it myself on a Kelsall cruising tri and occasionally
they appear secondhand. Have you discussed it with the vane's designer?
If you want a directly operated auxilliary rudder there's also the
"Autohelm" by Scanmar, or a secondhand Mustafa.
If you don't mind a pendulum servo then there are many more choices.

and the current isssue.
