Can anyone tell me if it's possible to 'unlock' the CPU on this heater? I've acquired a used one and although servicing looks straightforward enough, it won't help me if the CPU has locked itself.

No knowledge of W5WSC, but some on the D5WSC. There is a controller lock if you have, I think, ten start failures. In theory, you can use the clock/controller to interrogate the CPU to get the last fault code and reset it, but I've found that isolating the battery for a few minutes permits a restart.
