I never had a chart table; just used the saloon table when at sea. Pencils then stored in standard rack. I use propelling pencils - less trouble than sharpening same.
Now have chart plotter on deck. I bring it down in the warm for passage planning/route setting. Inputting a route is so easy 60 waypoints in a few minutes.
During a passage I'm on deck checking the route against the paper chart. We are too close to the bricks to do anything else.
To be realistic you can probably hand back your chart table to be used as a drying rack.
