Does anyone know what temperature is withstood by this material and remain "operational" (i.e. before melting or burning)?

Depends on the heatshrink material, most common is Polyolefin which has a maximum operating temperature of about 135c, you can take 20c or so off that for adhesive lined, again asumong it is Polyolefin.
