I have a 13M powercat with 2 x Yanmar 8lv320 engines. Apart from an occasional blowout I usually operate below 1,400 RPM producing speeds between 7 and 8 knots. I filled the tanks today - 780 litres total for 106 hours of operation so less than 7.6 litres per hour or approximately I litre per mile. I'm very happy with that.
I know my operating regime may be a bit unusual for my size of boat but I enjoy pottering around at a relaxed 7/8 knots. I know, I know, I'm under-working my engines. Surely they'll forgive me.

Just before you get to a destination, do you give them a few minutes at or close to WOT?
After a trip of a couple of hours or more I give them 10 minutes or so, close to full whack. A lot of my usage is much shorter trips, and standard practice when i tie up is to give them a few blasts in neutral, and then a minute on tick over before I close them down.

Which powercat is it IR?
Do you have any more consumption figures (or estimates) at higher speeds?
It's a Leopard 43PC.
I don't operate at higher speeds often enough to have any reliable record of my own. However i think these figures are not far off the mark - Note LPH are combined for 2 engines
