What wondrous materials might be available for replacing worktops these days?

There are some complicated cut-outs, so CNC millable or at least routable would be good, and the edges are visible in places so solid would be better.
Ideally not weighing a ton, which probably rules out ye olde tiled plywood. About 15 to 20 mm thick.

Any suggestions?

Corian is lovely but expensive, also does need to some care to keep it looking good. Can get it all prepared exactly as you want with cut outs, drainage grooves radiuses edges corners etc. Ours was made by a firm near Ipswich, I am afraid I can't remember the name and as the boat is sold I no longer have any invoices.
