I am thinking ahead to this winter and want to replace the work surface in the galley to smarten things up. Does anyone know what type of surface I should get and any decent (read Inexpensive!) suppliers of stuff that will do the job

Corian is the business, but is expensive. Maybe consider getting a trade kitchen fabricator to make a top in stainless, then stick that down to a waterproof ply core. One advantage is that the edges can be turned up into lips to contain the inevitable spillages.
 
Wood, including plywood, that is fully coated with West System epoxy will work well. It could be carefully finished to show the wood grain, or it could be painted. It is also possible to epoxy glass cloth onto the wood in such a way that the glass cloth is invisible and the wood grain shows through.
 
I´m abut to do the same thing, Corian or it´s local equivalent is the dogs danglies! Thast what I´m going to use, only want to do this once and thats why I´m going for broke! Although soem of ther new Formica is great stuff as well. Cooking is one of my hobbies, so I want it a pro job!
 
have a look at the IKEA wood worktops... inexpesive they are and no need to coat in epoxy etc.

they also do some nice small two burner hobs/sinks that could be let in... very posh.
