My partner and I have just purchased a Freedom 30 cat ketch. This is an initial step in the transition from "office/home" life to liveaboard. Are there any other Freedom liveaboards out there?

no, not a freedom, but we have an unstayed rig and found it works well for blue water work. the ability to drop or reef without rounding up is a great blessing.

do you have the alloy or carbon masts? - i believe the alloy ones have to be treated with care as a dent can make them fold.

She has carbon masts - I also believe they are less "delicate" than the alloy spars.
