There's quite a lot to consider now, regarding 'foul weather clothing'. Most manufacturers today provide excellent protection from the weather, with plenty of design features, compared with only a decade ago. Much depends on the kind of sailing you will be doing ( dinghy day-racing, offshore cruising or racing, ocean passages in warmer climates, lightweight club racer, racing trimaran.... ) and the season(s) in which you will sail. Certainly, the concept of wearing three layers - sweat-wicking 'base', wicking/warmth retaining 'mid', and waterproof 'outer' layers - with head and hands protection, is now widely supported. The English firm 'Musto' have contributed much to this development, as several of their senior people are competitive ocean racers themselves, and their catalogues are instructive. Look here:
Most people will prefer a 'jacket and trousers' arrangement, while some others - who need to work the foredeck on stromy occasions - prefer a 'one-piece' garment. I own and use foul weather clothing by Helly Hansen, Musto, and Pro Rainer and am pleased with the comfort and performance of each. The French firm 'Aigle' is not well known in England, so cannot comment.
By the way, by careful searching, I avoided paying 'full retail price' for all of this. You can do the same.
