Well, regardless of your relationship with her, your intentions (honourable or otherwise), and her nautical experience:
1. Keep your boat, and particularly the head, spotless...well, at least clean and in working order.
2. Give her privacy when required. No need to mind read, she'll tell you if for some reason you're lurking around the head and she has to use the facilities!
3. Provide the same disposal options you would find ashore. If you have to, post a sign in your head "Natural Waste and Toilet Paper Only to be Flushed Down - All Else Please Dispose of in the Bag Provided". It's a rule everyone follows regardless of gender. Then you can discreetly dispose of the waste once she is ashore, if she doesn't do it herself. Chances are she'll know what to expect/do anyway, but if she is a nautical neophyte, you should brief her on why the sign is posted...it will avoid embarrassment later, and a nasty mess particularly if you end up having to clear the blockage in the black water system...!
4. Make her part of the crew. Unless she is completely useless on a boat and/or wants to be treated as a figurehead, and is just along for the ride, then there is nothing more demeaning than plopping someone in a corner of the cockpit, telling her "Don't touch a thing..." and doing it all yourself. Sailing partner, or sailing widow, you make it what it will be...
5. When in doubt...ASK! Tactfully, that is...i.e. "Is there anything else you need to know or I can do for you before we get underway?" It's a fact of life and nothing to be embarrassed about, and it will show that you are considerate of her needs. Don't take it from me, ask another female friend you can trust to give you good advice!
My wife was ocean racing before I was, and was the only female out of 10 crew...if that bunch of rogues could figure it out, I'm sure you can! If your lady friend is worth her salt, she'll likely sort you out as required, too!
Craggy Steve should ensure that he has a plentiful supply of wet wipes to hand, and an adequate stock of Dettol.
Dettol is useful for freshening up smelly bilges.
You need a narrow beamed boat and a saloon table on the centreline. One foot goes out a porthole each side. Oh yes, and a label stuck on the deckhead saying "Brace yersel' Maureen"! /forums/images/graemlins/blush.gif /forums/images/graemlins/grin.gif

With all due respect I disagree. I keep wet wipes and plastic zip-loc bags in the locker inside the heads. I also have a spare outlet valve for the toilet -- nothing like a visual aid to drive home the limitations of a marine head.
