I managed to miss the joy of huge amps and speakers in hot hatches when I was growing up so no idea about ohms and watts in regard to speakers I'm afraid. My soon to be installed B&G V50 VHF says I can connect a 2w 8 ohm or a 4w 4ohm external speaker to it. I dont have one of those but do have a 100w 8 ohm water resistant speaker going spare. Can I use it without fear of blowing the VHF or similar? My poor googling brings up lots of sites regarding maximising volume and stuff but I just want to hear clearly if the marina said berth in row "d" or in row "e" without running downstairs

It won't hurt the vhf. No issue using a high rated speaker with a low output amp if the impedance is ok. I suspect there is a chance the volume from the speaker may be lower than expected compared to the 2 watt one as it is hardly being driven but it will depend on the design. Try it and see if the output is acceptable,

As said it will be fine. A higher impedance means less power to the speaker but no harm to the radio. A speaker rated for high power tend to be less sensitive (because cone is made stiffer/tougher. So less sound pressure for a given power in to the speaker but this probably won't concern you. ol'will
