Engine with heat exchanger what coolant temperature?

My Lombardini 702M coolant seemed to be steady at 85C last time I ran the engine.I'm assuming that all engines with heat exchangers operate at about the same temperature.Can anybody say at what temperature overheating becomes a possibility.Thanks

My Volvo D2/40 runs normally at 90C, which is what the thermostat is rated at. I believe the overheat temperature sensor is set at 110C. The cooling system has a small header tank and is fitted with a pressure cap so should not boil until at least 120C.

In a pressurised system you can have coolant well over 100C without it boiling. Boiling point increases with pressure. Steady 85C sounds fine.
