East to West Atlantic Crossing

We have the opportunity to sail across the Atlantic from Spain to Florida. What are the time limits for doing the crossing relatively safely? We know December from the Canaries is usual, but what is the latest we can leave from southern Spain to arrive in Florida with decent weather / winds?
Also, are there any gems of wisdom that is helpful in terms of routing, places to see / to avoid etc?

From the beginning of June there is an increasing chance of hurricanes.

The reason people leave at the beginning of December is to get as long as possible in the Caribbean during the 'safe' season.

There's a lot to be said for crossing after the new year as it avoids the 'Christmas winds' which is a period of stronger trades.
