Delia v Nigella

To cater for novice cooks upwards a far better cookbook than either of those is the classic Penguin Cookery Book by Bee Nilson.
It covers everything from the real basics - and I mean the real essential ones, not modern quick dodges - and background skills that neither Delia nor the luscious Nigella can be bothered with, and is still only the size of a normal paperback. The recipes are more traditional of course but for many that's the appeal.

I think you'll find that Delia made an entire TV series with accompanying book on the basics of cookery. Everything from boiling an egg to making toast as I recall!

And Mrs Beeton (the more modern updated version) for some very interesting recipes

(I say the more modern updated version because the original was actually pretty rubbish! It's fairly obvious that Isabella Beeton was no cook and, for the most part, plagiarised the recipes in her original work plus, quite often, the ingredients are difficult or all but impossible to source. The modernised version has lots of traditional recipes with modern ingredients, weights and measures)
