Damage to teak deck - help?

Boat has just been serviced and they have put a nasty gouge in the teak on the bathing platform. Seems to me there's a big risk of me ending up with a bodged fix and long and protracted discussions about what's good enough.

Does the panel have any advice before I start negotiations?
 
They have to put it back the way it was, replacing a plank in ness. If its a panel, then the panel needs removing repairing and replacing. There is no quick fix, unless you want to let in a "dutchman" and you will always see it.
 
The worst bit is in a panel on the wet laz let into the bathing platform; unfortunately the gash continues into the platform proper. I think they may need to replace the whole panel on the laz lid, but I'm worried stiff about the mess they might make replacing a couple of strips on the main platform. The match will be way out, but i guess it will mellow over time, spec with lots of oxalic and teak oil... What's a "dutchman" by the way? excuse my ingnorance!
