use a snuffer. hoist in very light winds to get used to how it is set up. when hoisting ensure that the sheet going aft is set so that it is at about the same length as the bow. this will help to extract it fromm the snuffer and make setting a lot easier. Snuffing is merely the same action in reverse.

Thanks for that. We have got a snuffer and do use it. What length should we have on the tack line? I appreciate the closer to the wind the lower the tack should be but is there a guide on how high the tack should be when on a broad reach?

Make up lightweight 2 part block & taykal and then play with it on your tack line, adjusting its length until you find what's best for you and your boat. Have fun.

Whilst I am no great expert on this, the solution will obviously depend on the type of boat. for me, I use about 300cm for close hauled, and about 1m for downwind.
