There is a small area of Formica-type surface beside my heads sink which is looking a bit scruffy. I don't want to use Fablon but thought a small piece of hardwood ply might do, suitably stained/varnished. Any other suggestions welcomed.

Certainly Formica will give the most appropriate, serviceable surface. We found you can often get offcuts from builders' merchants. In fact, we got an 8x4 sheet with damaged edges as an offcut! Be aware that Formica sheet shatters easily before it is glued down and the ragged edges can cut off a finger, never mind paper cuts! By bedding it on epoxy, the whole surface will be waterproof - varnished ply will soon absorb water and delaminate, but if you prefer ply you could set in into epoxy and get a couple of coats on top before varnishing, so the surface is effectively epoxy with the ply just to give the aesthetics.
