I need to change white gel coat filler to grey. I understand you can get various tints, but is there a black paint or something similar that I might have in my shed that will produce a pale grey? - this only for cosmetic cover for some filled holes

A splash of black paint will certainly make it grey, but will probably stop it from fully curing. Gelcoat pigments should be available from any decent chandler. Gelcoat filler is certainly available in a range of shades, although most places will stock only the ubiquitous white (which will probably not be quite the same colour as your white boat, or his, or his...)
 
You could try some of the 2-part epoxy glue/fillers that you find in your local hardware or builders. Some of them might be the correct grey colour and being epoxy will be water proof.
 
Well, I was really after a solution for this weekend, hence the "what have I got in my shed" question

I wanted a light grey colour once and tinted a can of white Toplac paint. Just used any old black paint.

I was surprised - Nay alarmed! - how little black paint was needed - just a few drops in a litre can.

I would try it on a small area and check out the curing.
