I have no real alternative as to where I can site my instruments, i.e. depth, log, compass etc.

Unfortunately, they get whacked now and then with ropes and general use.

Is there any 'see through' stick on stuff that I can protect them with ?

I am currently renewing one due to a cracked screen.

how about a perspex cover, either with holes or hinged so you can get to teh buttons?

There is a clear film often used on phone and pocket PC screens to protect them from scratches, but obviously wont help much with major impact damage

Could you possibly build a cover round them that would effectively sink your instruments but still allow you to see them. The problem with just covering them with perspex is it will also get whacked and either crack or get cloudy.
 
I have a yacht with a simple 3 sided frame, a batten down each side and one across the top of the instrument area, eack batten had a slot cut on the inside to take a sheet of Perspex, it was held in place by a clip at the bottom.

Very simple and economic, the sheet was simply slid down to access the controls, and the bottom being open ensures no water collected there.
