Over the winter I would like to make a small table which can double up for the cockpit and cabin.

What pedestals would you recommend that do not require major surgery in the cabin/cockpit soles.

I'm not after something fancy, something simple and practical.

Bought one of these recently. Seems to be a very well made piece of kit and easy to fix almost anywhere.
Usual disclaimers apply...

This one I made from an old mahogany kitchen door rescued from a skip.It clamps to the cross beam in the cockpit that the mainsheet traveller is attatched to so no surgery at all.

It folds flat for stowage, just big enough for two dinner plates and glasses.

There are stainless steel pedistal legs out there if you search around. I made the mistake of buying a pair of chrome/steel "budget" ones for a table I built... they started rusting within a month and began sticking in the ali sockets.
Owatrol has kept the rust at bay so far, but I will replace with SS as soon as....
