Having finally found some time to winterise my boat, I want to change my engine coolant this weekend. I haven’t had time to properly research this and I am a little unclear on the procedure. I believe I read somewhere on the forum that when refilling the system, the thermostat has to be removed to allow the coolant to get into the galleries of the lower block. Is this the case? Hopefully not?

The procedure for draining ( and flushing the heat exchanger) is described in your owners manual

But see also the note in the earlier section on "Coolant level. Checking and topping up" regarding refilling a completely drained system. There is no suggestion that the thermostat must be removed, just allow the system to self bleed while running for an hour then topping up as necessary.
