I'm fitting a windlass to a boat that is set up for manual handling at the moment. The chain pipe is the hooded upright type, so I need to replace it. Where can I buy the open type? One with a cap preferably. Thanks

I assume you mean something like this https://www.ebay.co.uk/p/Perko-Rope...5%26rvr_ts%3D9d2716701690ab66d891678cffc8bb92 but I have never seen one on a boat. Normally the chain just drops straight through a hole or hatch into the self draining locker. If you want to reduce the amount of water going into the chain locker you could try this:
